Ingredients

  • 3 Tbs Flour
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 2 cloves garlic, minced
  • 1/4 tsp cinnamon
  • 1 1/2 lb lean beef chunks
  • 2 Tbs oil
  • 1 cup beef stock
  • 1/2 cup apple juice
  • 6 small potatoes, scrubbed and cubed
  • 2 sweet potties, scrubbed and cubed
  • 1 green pepper, cut into strips
  • 1 red pepper, cut into strips
  • 1 onion, sliced
  • 1 28 oz can plum tomatoes
  • 1 28 oz can tomato puree
  • 2 Tbs honey
  • 2 granny smith apples
  • 1 can Kidney beans
  • 2 Tbs chopped parsley
  • cheddar cheese and black olives for topping

Preparation

Step 1

Mix together, flour, cumin, chili powder, garlic and cinnamon in a bowl. Pat dry the beef and coat with mixture. Heat oil in a large stew pot and brown the beef on all sides. Add stock and apple juice. Cover and simmer over medium heat until meat is tender, about one hour. Add potatoes, bell peppers, onions, tomatoes, puree and honey. Cover and simmer until potatoes are tender (about half and hour). Add apples and kidney beans and simmer another 15 minutes. stir in parsley and garnish with cheese and chopped olives.
