Ingredients
- 1/2 Cup Cooked Rice = 2 Points
- 7 oz. Healthy Choice Low-Fat Smoked Sausage
- 2 (15 oz.) Cans Fat-Free Black-Eyed Peas
- 2 Cups Fat-Free Beef Broth
- 1 (16 oz.) Package Frozen Vegetable Gumbo Mix
- 1 Tbsp. Dried Parsley
- 2 tsp. Hot sauce
- 1/2 tsp. Thyme
- 1/2 tsp. Ground Red Pepper
- 2 Cloves Garlic (Minced)
- 2 Bay Leaves
- Hot Cooked Rice

Step 1
♥ Bring all ingredients to a boil except the rice. Cover & simmer 30 minutes Discard bay leaves. Spoon rice into each bowl – top with gumbo
Yields 8 cups, 1 Cup = 2 Points
