Ingredients

  • 1/2 Cup Cooked Rice = 2 Points
  • 7 oz. Healthy Choice Low-Fat Smoked Sausage
  • 2 (15 oz.) Cans Fat-Free Black-Eyed Peas
  • 2 Cups Fat-Free Beef Broth
  • 1 (16 oz.) Package Frozen Vegetable Gumbo Mix
  • 1 Tbsp. Dried Parsley
  • 2 tsp. Hot sauce
  • 1/2 tsp. Thyme
  • 1/2 tsp. Ground Red Pepper
  • 2 Cloves Garlic (Minced)
  • 2 Bay Leaves
  • Hot Cooked Rice

Step 1

♥ Bring all ingredients to a boil except the rice. Cover & simmer 30 minutes Discard bay leaves. Spoon rice into each bowl – top with gumbo
