Ingredients
- 8 oz uncooked mostaccioli
- 1 egg
- 1 egg white
- 2 c 1% cottage cheese
- 1 pkg (10oz) frozen chopped spinach, thawed and squeezed dry
- 1 c shredded part skim mozarella cheese, divided
- 2/3 c shredded parmesan cheese, divided
- 1/3 c minced fresh parsley
- 1/4 t salt
- 1/4 t pepper
- 2 1/2 c meatless spaghetti sauce, divided

Step 1
Cook pasta according to box directions. Meanwhile, in a large bowl, combine the egg, egg white, cottage cheese, spinach, 2/3 c mozarella, 1/3 c parmesan, parsley, salt and pepper. Set aside. Drain pasta; stir in 2 cups spaghetti sauce.
Layer half of the pasta mix in a greased 11x7 baking dish. Top with spinach mixture, remaining pasta mixture and remaning spaghetti sauce.
Cover and bake at 350 for 35-40 min or until bubbly. Uncover; sprinkle with remaining mozarella and parmensan cheeses. Bake 5 min longer or until cheese is melted.
