Makes 12 regular size cupcakes or 6 large cupcakes (in muffin pan). If you make 6 large cupcakes, bake for an extra 8 minutes, until toothpick inserted in center comes out clean.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, room temperature
  • 1/2 cup sour cream
  • 1/4 cup whole milk
  • 2 tbsp red food coloring
  • 1 tsp vanilla
  • 1 1/4 cup all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Preparation

Step 1

Heat oven to 350 degrees. Place cupcake papers in tins or grease and lightly flour tins.

Mix flour, cocoa, salt and baking soda in medium bowl, set aside.

Beat butter and sugar on medium spped until creamy. Beat in eggs until light and fluffy.

Beat in sour cream, milk, food coloring and vanilla.

Beat in flour/cocoa mix on low speed until just blended.

Spoon batter into muffin cups.

Bake 20-25 minutes, until toothpick inserted in center comes out clean. Cool completely

Frost with your favorite buttercream or cream cheese frosting
