- pattypan squash (6 inches pattypan squash one)

- cup fresh mushrooms (chopped)
- 1 1

- cup sweet onion (chopped)
- 1 stalk celery (chopped)
- 1 tomato (coarsely chopped)
- 2 tbsps fresh basil (chopped)
- 1 tbsp hot sauce (chipotle)
- 1 tbsp garlic
- 1 tsp dried ancho chile (powder)
- 3 tbsps marsala wine
- salt
- pepper

Step 1
1 Cut the top off the squash and clean out all the seeds.
2 Mix all the ingredients together, stir to mix well.
3 Stuff the squash, put it's hat back on.
4 Place leftover stuffing in a piece of tin foil.
5 Place the stuffed squash in a baking dish
6 Bake in 375 oven for apprx 1 hour.
7 The baking time will depend on the thickness of the squash shell - mine was apprx1" thick.
8 Put the leftover stuffing in the oven for the last 20 minutes of baking.
