Chicken & Sesame Dumplings

Ingredients
- 1 T vegetable oil
- 1 1/2 heads garlic, peeled & thin sliced
- 1 T finely chopped fresh ginger
- 3 lbs. bone in chicken breast
- Salt & pepper
- 10 oz.frozen peas
- 5 large eggs, beaten
- 1 c breadcrumbs
- 3/4 c thinly sliced scallions
- 1/4 c sesame seeds, toasted

Step 1
In Dutch oven, heat oil. Add garlic, cook 1 min. Stir in ginger, cook 1 min. Add chicken & 6 c water; season with salt & pepper. Boil, then simmer 20 mins. Transfer chicken to plate to cool Remove meat from bones. Stir eggs, breadcrumbs, 1/2 c scallions, sesame seeds & 1 t salt. Drop 12 heaping tablespoons of the mix into simmering broth, cover, cook 10 mins. Divide dumplings among 4 bowls. Simmer peas in broth 1 min, return chicken to pot & cook until heated through. Serve in soup bowls with dumplings; sprinkle with remaining 1/4 c scallions & extra sesame seeds.
