Ingredients
- 8 small New Red Potatoes, Boiled in their skin
- 1/4 C Reduced fat Sour Cream
- 1 Tbs Butter, Melted
- 1/4 Tsp Garlic Salt
- 1/4 Tsp Dried Thyme
- 1/4 C Finely Chopped Green Onions
- 1/4 C Finely Shredded Cheddar Cheese
- Paprika

Preparation
Step 1
Preheat oven to 375 degrees.
Boil Potatoes. Cut in half. Scoop out insides, leaving 1/8-inch shell. Place insides in a mixing bowl. Mix with the flat beater on speed 2 for one minute. Add sour cream, butter, garlic salt and thyme. Turn to speed 2 and mix for 30 seconds. Turn to stir speed and add onions, mixing just until blended.
Spoon or pipe mixture into shells. Bake in a shallow baking dish for 20 minutes until thoroughly heated. Sprinkle with cheese and paprika. Bake until cheese is melted, about 3 more minutes. Serve warm.
Serves 8 (2 potato halves is one serving.)
