Summer Squash Sauté

Yields: 4 servings

Ingredients

  • 2 tablespoons olive oil
  • 1 zucchini, cut into 1/2-inch cubes
  • 1 yellow squash, cut into 1/2-inch cubes
  • 1 patty pan squash
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon dried marjoram (or 1 teaspoon fresh)

Preparation

Step 1

1. Heat the oil in a large sauté pan.
2. Add the zucchini, yellow squash, patty pan squash, salt and marjoram and sauté for another 3-4 minutes, stirring frequently.
3. When the zucchini turns bright green, turn off the heat and serve.
