Cauliflower, Roasted with Garlic/Almonds

Ingredients

  • 2 head cauliflower, trimme into florets
  • 2 heads garlic
  • 1/3 c EVOO
  • 1 t salt
  • 1 t ground cumin
  • 1/2 t pepper
  • 1 c sliced almonds, toasted

Preparation

Step 1

Preheat to 500 deg. Place cauliflower & garlic on large rimmed baking sheet. Combine EVOO, salt, cumin & pepper. Drizzle EVOO over veges; toss to coat. Spread veges in single layer & roast until tender & lightly charred, 25 mins. Let cool slightly; then using your fingers, squeeze roasted garlic out of their skins into bowl; add cauliflower and almonds and toss!
