Ingredients
- 2 lbs. mini carrots
- 1/4 c light brown sugar
- 1/4 c orange juice
- 3 T butter
- 2 cloves minced garlic
- 1/2 t salt
- 1/4 t pepper
- 2 scallions, sliced, 1/2 c
- 1/4 t grated orange zest
Preparation
Step 1
Combine first 7 ingredients and 1/2 c water in skillet. Bring to boil. Cover. Cook until just tender, 8 mins. Uncover; increase heat. Cook, stirring occasionally until carrots are lightly browned and sauce thickens. 8-10 mins. Stir in scallions and zest.
