Ingredients
- INGREDIENTS:
- 2 cups cooked corn fresh or frozen (2 cobs)
- 1 avocado, cut into 1/2"cubes
- 1 pint cherry tomatoes, halved
- 1/2 cup finely diced red onion
- DRESSING:
- 2 T olive oil
- 1/2 t grated lime zest
- 1 T fresh lime juice
- 1/4 cup chopped cilantro or basil
- 1/4 t salt
- 1/4 t pepper

Preparation
Step 1
Combine the corn,avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, Just before serving pour over the salad and gently toss to mix. (tear the basil just before serving and add at same time as dressing.
