Ingredients
- 1 T olive oil
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 C white rice
- 1/2 C tomato puree
- 1 C chicken stock

Preparation
Step 1
Sauté onion in oil; add garlic and cook 1 minute. Add rice and stir 1-2 minutes until all rice is coated. Add tomato puree and stock. Bring to a boil. Reduce heat, cover and simmer 25 minutes. Fluff with fork and serve.
