Ingredients
- Filling:
- 4 cups fresh peaches, sliced
- 1 tbsp lemon rind, grated
- 3 tbsp cornstarch
- 3 tbsp lemon juice
- Dumplings:
- 1 cup sifted bread flour
- 1/4 tsp salt
- 2 tsp baking soda
- 1/3 cup shortening
- 1/2 cup milk
- Syrup:
- 3 tbsp butter
- 3/4 cup sugar
- 1/2 cup water

Step 1
Preheat oven to 375 F.
Combine the filling ingredients, peaches through lemon juice, and place in an 8-by-8-by-2-inch baking dish.
To make the dumplings: sift the flour, salt and baking powder. Cut in shortening. Stir in milk. Drop by spoonfuls on peaches. (Bisquick can also be used for the dumplings).
For the syrup: Melt the butter in a saucepan and add the sugar water. Bring to a boil.
Pour the syrup mixture over peaches and dumplings. Bake at 375 F for 45 minutes.
Best served slightly warm with cream or ice cream.
