Ingredients

  • 6 cups chicken or turkey broth
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • 1/3 cup quick-cooking barley
  • 1 tablespoon dried parsley flakes
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 2 cups cubed cooked turkey
  • 1-1/2 cups sliced carrots
  • 1-1/2 cups sliced celery
  • 1 medium onion, chopped
  • 1 cup chopped green pepper
  • 1 package (10 ounces) frozen chopped okra

Preparation

Step 1

In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer for 50 minutes. Add turkey and vegetables. Cover and simmer 50 minutes longer or until vegetables are tender. Yield: 14 servings.
