Ingredients
- 2 C Chicken, Cooked and Shredded
- 3 C Cheese, Shredded and Divided
- 1 Onion, Chopped
- 1 19oz. Can Las Palmas Green Chile Enchilada Sauce
- 8 Corn Tortillas
- 3/4 C Sour Cream
- 1 4.5oz Can Chopped Green Chiles

Preparation
Step 1
In a small bowl, combine chicken, 2 cups cheese, green chiles and onions. In a small skillet, bring enchilada sauce to a boil; remove from heat. Dip each tortilla into heated sauce to soften. Spoon 1/3 cup chicken mixture and 2 tablespoons of sour cream down center of each tortilla. Roll; place tortillas seam side down in 12x8 baking dish. Pour remaining heated sauce over top; sprinkle with remaining cheese. Bake at 350 degrees for 20 minutes.
