Ingredients
- 1 1/2 cup oat flour
- 1/2 cup coconut flour
- 1 1/4 cups xylitol or truvia (truvia will change the texture)
- 5 eggs
- 1/2 cup safflower oil
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp pumkin pie spice
- 1 1/2 tsp cinnamon
- 1 15oz can pumpkin
- 1/3 cup almond milk

Preparation
Step 1
Mix all wet in one bowl and all dry in a separate bowl, stir each well. Then mix together, do not over mix or your muffins will be tough. Bake 365 for 36-38 minutes. Makes 7 JUMBO muffins.
I am past my first 28 days and I used 1 1/2 cup spelt flour and 1/2 cup oat flour and 1/2 coconut palm sugar and 1/2 truvia.
P1 - 1 1/2 c spelt flour
1/2 c oat flour
1/2 cup rice milk
5 egg whites
Omit the oil
