Ingredients

  • 2 lbs. carrots, peeled and sliced
  • 1 large onion, finely chopped
  • 3 tbsp. melted butter
  • 3 tbsp. flour
  • 2 cup milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup shredded monterey jack or gruyere cheese

Step 1

Cook carrots and onion until tender in enough salted water to cover, drain.
Combine butter and flour; place over low heat, blending until smooth. Gradually add milk; cook, stirring constantly, until smooth and thickened. Add salt, pepper, and cheese, stirring until cheese melts.
Spoon cheese sauce over carrots and onion.
Yield: 6=8 servings.
