Ingredients

  • 1 (8 oz.) package uncooked elbow macaroni
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1 tbsp. sugar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 6 slices bacon, cut into 1 inch pieces
  • 1 tbsp. flour
  • 1 medium size onion, sliced
  • 6-8 radishes, thinly sliced
  • 2 tbsp. chopped fresh parsley

Preparation

Step 1

Cook macaroni according to package directions; drain. Rinse with hot water; drain. Cover with a hot damp cloth, and set aside.

Saute bacon until crisp; drain on paper towels, reserving 1 tbsp. bacon drippings. Stir flour into reserved drippings; cook over low heat, stirring constantly, until bubbly. Add vinegar mixture; cook, stirring constantly, until slightly thickened.

Combine macaroni, bacon, onion, radishes, and parsley. Pour vinegar mixture over salad, and toss lightly. Serve hot.
Yield: 6-8 servings.
