Ingredients

  • 1 can Black Beans, drained and rinsed
  • 1 cup chopped onion
  • 1 can (14 1/2 oz. ) diced tomatoes, drained
  • 1 can (8 oz. ) tomato sauce
  • 1 cup fresh or frozen corn
  • 1/2 cup water
  • 1 1/4 tsp. chili powder
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 2/3 cup uncooked elbow macaroni
  • 2/3 cup shredded reduced-fat cheddar cheese

Preparation

Step 1

In large nonstick skillet, cook onion over med. heat,
until tender. Stir in tomatoes, tomato sauce, corn, beans, water, chili powder, oregano and salt.

Bring to a boil. Add macaroni. Reduce heat; cover and simmer for 20-25 mins. or until macaroni is tender. Sprinkle with cheese; cover and cook 2-3 mins. longer or until cheese is melted.
