Slow Cooker White Chili

Ingredients
- For serving:
- 4 chicken breasts, cut into cubes
- 1 med. onion, chopped
- 1 15-oz. can green chilies, drained
- 2-4 chipotle peppers
- 2 15-oz. cans Great Northern beans, drained and rinsed
- 2 15-oz. cans navy beans, drained and rinsed
- 2 15-oz. cans cannellini beans (white kidney beans), drained and rinsed
- 1 15-oz. can yellow corn, drained
- 1 16-oz. pkg. frozen white corn
- 1/4 C. cumin powder
- 1 Tbs. coriander powder
- 1 tsp. curry powder
- 1-2 C. chicken broth
- garlic, salt and pepper to taste
- tortilla chips
- shredded cheese of your choice

Directions
Add entire list of ingredients (minus the corn) into your crock pot and turn it on LOW. Be sure to stir the pot every so often. About 1 hour before you serve, add all of the corn and mix well.
Sprinkle shredded cheese (Mexican style is our favorite) over the top and dip with tortilla chips!
NOTE: If you are in a hurry and just cannot wait the full eight hours, you can bump up the temperature of your crock pot to HIGH and you should be ready to serve in about 4 hours. (BE SURE to pay close attention to the chicken and make sure it is thoroughly cooked.)
