Ingredients
- 1 1/2 cup whole wheat flour
- 3 tablespoons bran
- 1 1/2 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 3/8 teaspoon nutmeg
- 3 cups shredded apples
- 1 cup honey
- 3/8 cup safflower oil
- 3/4 cup nuts (optional)
- 2 medium eggs, well beaten
- 3/4 teaspoon vanilla

Preparation
Step 1
1. Preheat oven to 350F. Spray a 9x13-inch pan with cooking spray.
2. In a large mixing bowl, combine flour, bran, baking soda, cinnamon and nutmeg.
3. Stir in honey, oil and eggs.
4. Add vanilla, then apples and nuts (optional); mix well. Pour into prepared pan.
5. Bake at 350F for 35 minutes or until a toothpick inserted into middle comes out clean.
