- 1/2 gallon vinegar
- 10 pounds sugar
- 1 box celery seed
- 1 box whole allspice
- 1 box stick cinnamon
- cheese cloth bag
Soak 7 days covered with water and 1 cup salt, if scum appears sprinkle more salt on top.
8th day - pack pickles alternately with horseradish leave, rinse before doing, cover with water.
9th day - drain, take out leaves cover with boiling water plus 1 teaspoon alum (powdered)
10th day - drain and reboil the brine return to crock
11th day - drain and reboil the brine return to crock
12th day - cut pickles lengthwise and cover with syrup which has
been brought to boil
13th day - drain and reboil syrup and return to crock
14th day - reboil syrup with pickles and pack in sterile jars.
