Ingredients
- 9 " Square Pan
- 1 (8 oz) can jalapeno peppers, seeded and chopped
- 1 (8 oz) pkg. shredded cheddar cheese
- 4 eggs, beaten
- 1/2 tea. salt
- 1/4 tea. pepper
- 9 x13 Baking Dish
- 2 (4 oz) cans jalapeno peppers, seeded and chopped
- 1 lb. bacon, cooked and crumbled
- 1 (12 oz) pkg. shredded Mexican 4 cheese blend
- 1 (4 oz) can sliced mushroom stems and pieces, drained
- 10 eggs, well beaten

Preparation
Step 1
9" Square pan
Preheat oven to 400 degrees.
Place peppers in a greased 9" square pan. Sprinkle cheese over peppers and pour eggs, salt and pepper over cheese.
Bake for 20 minutes. Let sit at room temperature for about 10 minutes. Cut into squares.
9x13 baking dish
Preheat oven to 325 degrees.
Line bottom of greased 9x13 baking dish with jalapenos.
Sprinkle bacon pieces, cheese and mushrooms in layers. Pour beaten eggs over top.
Cook for about 25-30 minutes or until center is firm.
Let stand 15 minutes before slicing.
Cut in to squares and serve hot.
