Ingredients

  • 4-5 Idaho potatoes
  • 1 1-1/2 cups flour
  • 1 egg
  • 1 tsp salt
  • pinch of pepper
  • 1 Tbs grated onion
  • 3 Tbs butter (melted)
  • 1 Tbs bread crumbs (mixed with butter)

Preparation

Step 1

Scrub potatoes but do not peel. Cook in boiling water until tender. Drain and chill overnight. Peel and grate potatoes. Add 1 cup flour, egg, salt, pepper and onion and blend. Add additional flour ao that the mix hods together. Shape into balls the size of an egg. Cook in boiling salted water 8-10 minutes. Remove at once and serve topping with butter and bread crumbs. Makes 7-8 dumplings.
