  • FILLING:
  • 1 c. blueberries, washed, patted dry and sprinkled with 1 tbsp. flour
  • 1/2 c. raisins
  • 4 tbsp. unsalted butter, at room temperature
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1 large egg
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 c. orange juice
  • 1/2 c. chopped walnuts
  • 6 oz. cream cheese, at room temperature
  • 1/3 c. sugar
  • 1 large egg
  • 1 tbsp. orange zest

Step 1

Preheat oven to 350. Grease a 9x5" loaf pan and lightly dust with flour.

Beat butter, brown sugar and granulated sugar in a medium mixing bowl until creamy. Beat in egg.

Sift the flour, baking powder, baking soda and salt together in a medium bowl. Add the flour mixture alternately with the orange juice to the butter mixture to make a fairly thick batter. Fold in the blueberries, raisins and walnuts.

Prepare the filling: Place all ingredients in a food processor fitted with the steel blade. Process until smooth.

Pour 2/3 of the batter into the prepared pan. Top with all the filling, then top with remaining bater. Lightly swirl with a knife.

Bake until bread is golden brown and firm to the touch, about 55-60 minutes. Let cool 10 minutes. Turn onto a wire rack to cool completely. Serve or wrap and store in refrigerator.
