Ingredients

  • 3 eggs, beaten
  • 2 cups sugar
  • 1 cup oil
  • 2 tea. vanilla
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 tea. baking soda
  • 3 tea. cinnamon
  • 1 tea. salt
  • 1/2 tea. baking powder
  • 1 cup chopped pecans
  • 1 (8 oz) can crushed pineapple, drained
  • To serve: 1 (8 oz) carton spreadable cream cheese

Preparation

Step 1

Preheat oven to 325 degrees.

Mix eggs, sugar, oil and vanilla and mix well.

Add remaining ingredients except cream cheese, mix well and pour into 2 greased, floured, 9x5" loaf pans.

Bake for 60 minutes or until toothpick inserted in center comes out clean. Cool several minutes.

To serve, slice and spread with cream cheese.
