Gina's Spicy Corn Chowder

Ingredients
- 4 pieces thick-sliced bacon, chopped
- 1 medium Vidalia onion, finely chopped
- 1 medium red bell pepper, chopped
- Salt and freshly ground black pepper
- 1 small jalapeno, chopped seeds and ribs removed
- 3 cloves garlic, finely chopped
- 1/4 cup all-purpose flour
- 4 cups chicken stock
- 2 large red potatoes, well scrubbed and small diced
- 1 cup heavy cream
- 16 ounces frozen corn
- 1/4 teaspoon cayenne pepper
- 1 bay leaf

Step 1
In a small saucepan over medium heat, saute the bacon until crisp and browned and the fat is rendered. With a slotted spoon, transfer bacon to paper towel and reserve. There should be about 4 tablespoons of bacon grease in pan.
Add the onions and red pepper to pan. Saute until tender and translucent, about 4 minutes. Season with salt and pepper, to taste. Add the jalapeno and garlic and saute until fragrant, about 1 minute. Stir in the flour until thoroughly combined. Cook the flour until it reaches a slight blonde color, about 1 minute. Stir in the chicken stock and the potatoes and simmer for 10 minutes; potatoes will become soft. Add the cream, corn, cayenne and bay leaf. Simmer for 15 more minutes. Pour into a serving bowl and garnish with the reserved bacon.

I found this recipe on my Food Network app because it was a cold sunday, and I wanted to make some warm and comforting soup. This one hit the spot! It's definitely a spicy one, but delicately rich in flavor without being overwhelming. I added some chicken I roasted with garlic and pepper, and it was just fabulous! I entertained with the first pot (I had to make two, and froze the second in individual portions. They thawed and tasted just as good.
Great if you like spicy comfort food.
I made this last week and it was DELICIOUS! I modified the recipe a little, instead of using the jalepeno's I did a splash of hot sauce, and being from Baltimore, MD I added lump crab meat , shrimp and some old bay seasoning. It was a little too thick, so I cut it with a little chicken stock to loosen it. Next time I won't use as many potato's (less starch and will use less flour for thickening. I also added a splash of sherry to it.
Loved this recipe! So easy and delicious. My mom and dad who don't even like corn chowder loved it! The jalapeno gives it a good little kick!

Very flavorful!! I was looking for a Spicy Corn and Crab Chowder so I used this recipe and then added crabmeat at the end. Very yummy, and just enough spice!! A Keeper!!
I had this recipe today at a baby shower and it was a major hit. This dish definitely earned every bit of the 5 stars. It was so flavorful everyone was loving it. Can't wait to make this for my husband and children. We all enjoy corn and I know they will enjoy the corn chowder.
This is great. Add the jalapeno a little at a time so it doesn't get too spicy.
I made the corn chowder this morning...I changed up the recipe a bit since I didn't have jalapeno...instead, I added two splashes of Frank's Hot Sauce. Then, in addition to the corn I added a can of black beans ...since I love them! Lastly, I felt the chowder was a bit thin so I added (after everything was in the soup) a slurry of 1 tsp of melted butter and 1 tablespoon of flour...I mixed them until it formed a paste and added it to the soup. It tightened it up to the right consistency for my palette. Gina...this is the tastiest corn chowder ever!
My husband and I made this for dinner last night. We did add a couple of ingredients as we were tasting to adjust the seasoning. We added 2 TBSP of worcestershire sauce and 1 TBSP of brown sugar. It turned out to be very robust and added just a little bit of sweetness to the dish. This has become our new favorite comfort recipe!!!
Wonderful! I didn't use the jalapeno and tweaked it to my liking. I also peeked at Ina Garten's recipe and decided to add tumeric...and quite a lot! My boyfriend and his buddy (both watermen and my friend who owns a bridal shop RAVED about it. Very simple and savory...even in the summer.
I absolutely love this recipe. I went on vacation last year and had some corn chowder for the first time and I was in love! I came home and I wanted to try to make it. The funny thing was, this episode was on TV so I knew it was fate. I tried it and loved it! I am in the mood again for it, so I am making it today!
