Ingredients

  • 1 medium potato
  • 1 medium onion
  • 1 stalk celery
  • 1/4 cup flour
  • 1/4 lb butter (one stick)
  • 13 oz. clams with liquid (2 6.5 oz cans)
  • 8 ounces of clam juice
  • 1 quart of milk
  • 1/4 cup green pepper
  • Salt-pepper- thyme to taste

Preparation

Step 1

Dice potatoes into 1/2 inch cubes and cook (boil) with small amount of onion and set aside after draining. Melt butter in sauce pan then cook at simmer for 5 minutes then add onion, celery, and pepper. Then add flour and cook while stirring for 5 more minutes to make rue. Add clams with liquid, clam juice and milk. Bring to boil then reduce to simmer immediately and allow to simmer for about 15 minutes until consistency you want is reached. Add potatoes and spices to taste.
