Tortellini with Peas and Tarragon 1 Picture

Ingredients

  • 1 lb frozen cheese tortellini
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, finely chopped
  • 1 1/2 cup frozen peas
  • Kosher salt and pepper
  • 2 tablespoons chopped fresh tarragon
  • 1/2 cup grated parmesan

Step 1

Cook tortellini according to package directions.
Meanwhile, heat oil in large skilled over medium heat. Add onion and cook until soft, about 6 minutes. Increase heat to medium high. Add butter and cook until it turns golden brown, about three minutes. Stir in garlic, peas, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until heated through, 2-3 minutes.
Add the tortellini, tarragon, and 1/2 the parmesan and toss. Divide among bowls and sprinkle with the remaining paremsan.
