Pepper-Crusted Flank Steak

You can make this steak on a grill, weather permitting. Preheat your grill (or a grill pan on the stove) to medium-high heat. Oil the grill just before adding the meat. Cook the steak for 4 to 5 minutes per side for medium-rare. To test, remove the meat from the grill and touch it with your finger. A medium-rare steak will feel firm and will snap right back.

  • 1 teaspoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon olive oil

Step 1

1. Preheat oven to 400ºF. Rub steak on both sides with salt and pepper.

2. Warm oil in a large ovenproof skillet over medium-high heat. Add steak and cook until browned on 1 side, about 1 minute. Carefully flip steak and cook until browned, about 1 minute longer.

3. Transfer skillet to oven and cook steak to desired doneness—6 to 8 minutes for medium-rare. Transfer steak to a cutting board, tent with foil to keep warm and let stand for 5 minutes before slicing and serving.
