Ingredients

  • 2 boneless skinless chicken brst. halves (5 oz. each)
  • 2 slices Swiss cheese 3/4 oz. each
  • 2 thin slices deli ham
  • 1 Tbs. butter
  • 1 TBS. olive oil
  • 1/4 C. chopped onion
  • 1 small garlic clove, minced
  • 1 tsp. all-purpose flour
  • 1/3 C Marsala wine or chick. broth
  • 2 tsp. minced fresh parsley
  • 1 tsp. minced fresh rosemary or 1/4 tsp. dried rosemary crushed
  • 1 tsp. minced fresh thyme or 1/4 tsp. dried thyme
  • Dash salt & pepper

Preparation

Step 1

1. Flatten chicken to 1/4 in; place one cheeses and ham slice down center of each. Roll up jello-roll style, starting with short side; secure with toothpicks.

2. Brown chicken in butter and oil on all sides; Cover and bake at 350 for 20-25 min.

3. Saute onion and garlic until tender; Stir in flour until blended; gradually add wine. Bring to boil; Cook and stir for 2 min. or until thickened. Stir in flour until blended. Stir in remaining ingred. Serve chick. with sauce.
