Ingredients
- 3 to 4 lb boneless pork loin
- 1 8 inch liguica sausage
- 1 Tbs olive oil
- 1/2 tsp salt
- 1/2 tsp dry mustard
- Parsley, for garnish

Step 1
Make a cut through the center of the pork by running a sharp, narrow blade through the middle, end to end. Make cut just wide enough to insert the sausage. Push sausage into the cut. Combine oil, salt and mustard and rub over outside of pork, Place meat on a rack in a shallow baking pan, Roast in pre-heated 325 degrees oven for 1 1/2 hours (Pork should reach 145 degrees). Let stand out of oven for 10 to 15 minutes before carving. Use drippings to make gravy. Garnish with parsley.
