Cajun Chicken Sausage Jambalaya

Enjoy awesome Cajun rice in no time with a little help from Johnsonville. This recipe starts off with the holy trinity of Cajun cuisine: onions, bell peppers, and celery. Throw in your favorite long grain rice and diced tomatoes, add in Johnsonville’s Cajun Style Chicken Sausage, and you’ve got yourself an authentic Cajun dish that’s sure to please.

Ingredients
- 1 package (12 oz.) Johnsonville Cajun Style Chicken Sausage links, sliced
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 2 ribs celery, chopped
- 2 jalapeño peppers, seeded and diced (optional)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can (28 ounces) tomatoes, diced
- 1/2 cup water
- 1 tablespoon tomato paste
- 3/4 teaspoon Cajun seasoning
- 1/2 pound frozen cooked medium shrimp, thawed and tails removed
- 2 cups hot cooked rice

Preparation
Step 1
In a large saucepan, sauté the onion, pepper, celery and jalapeno peppers in oil until crisp-tender. Add sausage and garlic; sauté 1 to 2 minutes longer.
Add the tomatoes, water, tomato paste and seasoning; bring to a boil. Reduce heat; cover and simmer for 15 minutes.
Stir in shrimp and rice; heat through.

Very easy to make. Tasty and filling. Crowd pleaser.
First of all, like the other reviewer, I was disappointed when I got home to make it and found I did not have celery and tomato paste. I noticed it has been added since. I am not sure i would have made much difference though. It was just bland and the sausage was not very appealing in the dish. I would add more cajon seasoning, more garlic and salt and pepper. At least I made yellow rice with it and that made it tolerable.
Celery and Tomato paste were not listed in ingredients you will need but were called for in the recipe.
