Ingredients
- 4 cups raw cashews, soaked 2 hours or more
- 1 1/2 teaspoons fresh rosemary leaves
- 1 teaspoon nutritional yeast
- 1 1/2 teaspoons white miso
- 1 teaspoon lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon sea salt

Step 1
1. Place all ingredients in a food processor and process until the mixture roughly represents cottage cheese.
2. Transfer mixture to a high speed blender and blend until smooth (it will be very thick, so be careful not to allow the blender to overheat the contents – if this happens, let it rest for a bit and then keep blending in stages).
