Ingredients

  • 1-1/2 C. flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 5 T. butter, softened
  • 1 C. sugar
  • 2 eggs
  • 1/2 C. milk
  • grated rind of 2 lemons
  • 1/2 C. finely chopped pecans (optional)

Preparation

Step 1

Preheat oven to 350 degrees

Sift flour paking powder, and salt together. Cream butter and sugar. Add eggs, beating until light and fluffy. Thoroughly blend into flour mixture. Stir in milk, lemon rind and pecans. Pour batter into greased 9"X5" loaf pan or mini loaf pans. Bake for 1 Hr or 30 min. (mini loaf)or until toothpick comes out clean.

Glaze: Mix juice of 1 lemon and 1/2 C. sugar until sugar disolves. Poke holes in top of loaf with a toothpick, and spoon glaze over bread immediately after removing from oven.
