Szechuan-Style Chicken and Broccoli

This sassy stir-fry allows you to make great take-out right in your own kitchen. It features chicken and lots of crisp veggies in a flavorful sauce that's been kicked up with picante sauce. Provided by: Campbell's Kitchen

Ingredients
- 1 tablespoon cornstarch
- 3/4 cup Pace Picante Sauce
- 2 tablespoon soy sauce
- 1 teaspoon sugar
- 2 tablespoon vegetable oil
- 1 pound skinless, boneless chicken breast half, cut into cubes
- 2 cup broccoli florets
- 1 medium green or red pepper, cut into 1-inch pieces (about 1 cup)
- 1 medium onion, cut into wedges
- Hot cooked rice

Step 1
Stir the cornstarch, picante sauce, soy sauce and sugar in a medium bowl with a fork until it's well mixed and set aside.
Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until it's well browned, stirring often. Remove the chicken from the skillet and set aside.
Add the remaining oil to the skillet. Add the broccoli, pepper and onion and cook until they're tender-crisp, stirring often.
Stir the cornstarch mixture and add it to the skillet. Cook and stir until the mixture boils and thickens. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until chicken is cooked through. Serve the chicken mixture over the rice.

This is absolutely, a fantastic and easy recipe! Who'd have thunk, that the combination of picante sauce and soy sauce would blend to make such a wonderful flavor. I've been making this for years now, and have just gotten around to rate it, I'm glad I did, it needs more reviews! Make this dish, you wont regret it!
It's so good!
I did not like the combination of taste, and ended up having to put a bit of BBQ to 'save the dish'. But maybe it was the brand of soy sauce I was using..'La Choy' I dont know but I will probably not cook this again.
I found this recipe on the Campbell Kitchen website because I was trying to find something to cook with chichen and broccoli. I was very unsure as to how it was going to taste. I didn't know what Picante Sauce would taste like in the dish. I actually didn't have Picante Sauce so I used salsa instead. It was wonderful. My boyfriend loved it and wanted me to make it again the next week. I made it exactly by the recipe the second time. It was still wonderful. Tomorrow is his birthday, and he wants this dish again. That will be 3 times in 3 weeks. Thank you Cambells Kitchen for a wonderful recipe.
