Ingredients
- 1 tablespoon soy sauce
- Rice vinegar
- 6 oz. shrimp, beef or. chicken, thinly sliced
- 2 tablespoons cashews
- 1 tablespoon oriental stir fry oil
- 2 cups assorted hard vegetables, cut into bite-size pieces (snow peas, carrots, summer squash, broccoli, red bell pepper)
- 2 cups soft vegetables, cut into thin strips (Chinese cabbage, bean sprouts, scallions, mushrooms, water chestnuts)

Preparation
Step 1
Add soy sauce to shrimp, beef or chicken.
Preheat wok or pan. Add cachews and cook until golden, stirring frequently, remove and set aside.
Add oriental stir fry to pan. Place half the "meat" in the pan and stir fry until cooked through. Remove and reserve. Repeat with remaining meat.
Add hard vegetables to pan. Stir-fry for about 3 to 5 minutes. Add rice vinegar, soy sauce, oriental stir-fry oil and soft vegetables. Stir-fry for about 2 minutes. Add reserved "meat" and stir fry to warm through. Taste and adjust seasoning.
Serve over rice and sprinkle with cashews.
