    T olive oil

    C pistachios- shelled

  • 1/2

    C dry bread crumbs

Directions

Preheat oven to 500 deg. Lightly grease a baking sheet with cooking spray or butter. In a shallow bowl mix mustard, oil and honey. In a food processor or blender pulse pistachios and bread crumbs until nuts are finely chopped; pour into another shallow bowl. Cut chicken into roughly 1 1/2 by 1 inch trips. One at a time, dip the stips into mustard mixture, roll them in pistachio mixture and plce them on the baking sheet. Place in oven, then immediately turn oven down to 375 deg. Bake, turning once, until crust is golden brown and chicken is cooked through, about 20 minutes,.
