Ingredients
- 2 c all purpose flour
- 1/3 c sugar
- 1 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1-2 t cinnamon according to your taste
- egg
- 1 cup fat free milk
- 3/4 c unsweetened applesauce
- 1 t vanilla extract
- 10 t of your favorite jam low sugar/low fat

Step 1
Preheat oven to 400. Since there is no butter or oil in this recipe you either lightly grease the muffin tins or spray your muffin papers.
In a large bowl, combine flour, sugar, baking powder, baking soda, salt and cinnamon. In a separate, small bowl, beat together the egg, milk, applesauce, and vanilla. Combine the wet mix into the dry and gently fold together. Do NOT overmix. Just fold the combined ingredients together until all dry bits have been absorbed. Batter will be lumpy.
Fill the muffin tray cups 1/3 full. Drop about 1 tsp of your favorite jam into the center and cover with another layer of muffin mix. Bake for 15 min or unil lightly golden brown.
