Ingredients
- 3 tbsp. melted butter, divided
- 3 tbsp. flour
- 1 1/2 cups milk
- 1/2 tsp. salt
- 2 cups shredded cheddar cheese
- 1/2 cup chopped green pepper
- 1 cup chopped celery
- 1 medium-size onion, chopped
- 3 hard-cooked eggs, coarsely chopped
- 1/4 cup chopped pimiento
- Hot cooked rice

Preparation
Step 1
Combine 2 tbsp. butter and flour; cook over low heat until bubbly. Gradually add milk; cook, stirring constantly, until smooth and thick. Season with salt. Add cheese, stirring until melted.
Saute green pepper, celery, and onion in 1 tbsp. butter. Add to sauce along with eggs and pimiento; stir gently. Serve over hot rice.
