Ingredients

  • 4 chicken breast - sliced/pounded thin
  • 1 lemon - juiced
  • 1/4 cup brown sugar
  • 1/4 cup vinegar
  • 2 Tbsp water
  • 1/2 cup fig preserves
  • 1 lemon - sliced
  • salt to taste

Preparation

Step 1

1. Preheat Oven 400 degrees.
2. Grease 8" square glass baking dish.
3. Mix lemon juice, brown sugar, vinegar and water.
4. Place chicken in dish.
5. Pour mixture over chicken and cook 20 minutes.
6. Drain juice from dish. Spoon preserves on top of chicken and spread.
7. Add sliced lemon to tops of chicken breast and salt lightly.
8. Bake an additional 10-15 minutes or until juices run clear.
9. Broil on high for 5 minutes to caramelize the preserves.
