Ingredients
- Pie:
- 3/4 cup sugar
- 3 Tbsp cornstarch
- 1/4 tsp salt
- 2 cups milk
- 3 egg yolks, slightly beaten (reserve whites for meringue)
- 2 Tbsp butter
- 1 tsp vanilla
- 1 1/2 cups flaked coconut
- 1/3 cup coconut
- Cooled, baked pie crust
- Meringue:
- 3 egg whites, room temp
- 1/2 tsp cream of tartar
- 1/4 cup plus 2 Tbsp sugar
- 1/2 tsp vanilla

Preparation
Step 1
Pie:
In a saucepan, combine sugar, flour, cornstarch and salt. Gradually stir in milk and flaked coconut. Cook and stir over med hi heat until bubbly. Cook and stir 2 mins. Remove from heat and stir a moderate amount of hot mixture into the yolks. Immediately return to the hot mixture. Cook 2 mins, stirring constantly. Remove from heat. Add butter and vanilla. Pour into cooled, baked pastry shell.
Meringue:
Beat 3 egg whites and cream of tartar at high speed for one minute. Gradually add sugar, one tbsp at a time, until stiff peaks form. Beat in vanilla.
Spread meringue over pie and bake 350 degrees for 12 -15 minutes until browned.
