  • 1 lb fresh or frozen cod or orange roughly fillets
  • 1 T lime juice
  • 1 T olive oil
  • 1/8 t salt
  • 1/8 t ground black pepper
  • 1/2 c bottled salsa verde
  • 3 T snipped fresh cilantro

Step 1

Thaw fish if frozen. Rinse fish, pat dry with paper towels. Preheat boiler. In a small bowl, combine lime juice, oil, salt and pepper. Brush fish with lime juice mixture.

Measure thickness of fish. Place fish on the greased unheated rack of a broiler pan. Tuck under any thin edges. Broil 4 inches from heat until fish flakes easily with tested with a fork. (Allow 4-6 mins per 1/2-in thickness of fish. If fillets are 1 in or more thick, turn once halfway through broiling.)

Meanwhile, stir together salsa verde and 2 T of the cilantro. Top fish with salsa mixture; sprinkle with remaining 1 T cilantro.
