Ingredients
- 2 lb large shrimp, peeled and deveined
- 2 Tbsp Old Bay seasoning
- 2 cups thinly sliced white onion
- 1 large lemon, thinly sliced
- 6 fresh bay leaves
- 1/2 cup each olive oil and distilled white vinegar or rice vinegar
- 1 tsp kosher salt
- 1/2 tsp each celery seed, mustard seed, Tabasco sauce, coarsely ground black pepper, and sugar

Preparation
Step 1
Boil shrimp in a pot of water with Old Bay until cooked, 2 minutes. Transfer shrimp to a bowl of ice water to cool. Drain shrimp, transfer to a bowl, and set aside.
Combine onion, lemon, bay leaves, oil, vinegar, salt, celery seed, mustard seed, Tabasco, pepper, and sugar; toss with shrimp. Cover shrimp and chill at least 24 hours or up to 2 days, stirring occasionally. Bring shrimp to room temperature before serving.
