Ingredients
- 4 6-in store-bought or homemade toastadas
- 3 T olive oil
- 1 med onion, chopped (1/2 c)
- 1/2 fresh jalapeno pepper, seeded and finely chopped
- 1 clove garlic, minced
- 1 c rinsed and drained canned black beans
- 1 c chopped, seeded tomato
- 4 oz Monterey Jack, cheddar or mozzarella cheese, shredded (1`cup)
- 2 T chopped fresh cilantro

Preparation
Step 1
In a large skillet cook onion, jalapeno and garlic in 3 t olive oil over med-high heat until onion is tender. Stir in black beans and tomato; heat through.
Sprinkle tostadas with half of the cheese. Spoon bean mixture over cheese. Sprinkle with remaining cheese. Bake about 4 mins or until cheese melts. Sprinkle with cilantro.
