Southwestern "fried" chicken

Ingredients
- 1 T. garlic powder
- 1 T. onion powder
- 1 T. paprika
- 1 T. chili powder
- 1 t. cumin
- 1/2 t. salt
- 1/2 t. pepper
- 8 (6 oz) skinned chicken breast halves
- 1 1/2 C. low fat buttermilk
- 1/2 C. dry breadcrumbs
- 1/2 C. yellow cornmeal

Preparation
Step 1
Combine first 7 ingds. in small bowl; stir well. Rub chicken with 3 T. spice mixture. Set remaining spice mixture aside.
Place chicken in 13X9 baking dish; let stand 10 mins. Pour buttermilk over chicken, turning to coat. Cover and marinate in refrigerator 2 hours; turning chicken occasionally discard buttermilk.
Preheat oven to 400* Combine remaining spice mixture, breadcrumbs, and cornmeal in shallow dish; stir well. Dredge chicken in breadcrumb mixture and place on a baking sheet sprayed with Pam. Bake 20 mins.. Lightly spray chicken with cooking spray, and bake an additional 20 mins. or until chicken is done (do not turn).
