Crunchy Baked Flounder

Coat flounder fillets in a mixture of panko breadcrumbs and Parmesan cheese for a quick and easy fish dinner. If flounder is not available, you can use any other mild white fish fillets.

- 1/2 cup panko
- 1/2 cup grated Parmesan
- 3 tablespoons unsalted butter, melted
- 4 flounder fillets (1 1/2 lb.)
- Salt and pepper

Preheat oven to 425°F. Mist bottom of a large baking dish with nonstick cooking spray. Combine panko, Parmesan and butter in a small bowl and stir mixture well.
Sprinkle both sides of flounder generously with salt and pepper. Arrange fish in prepared baking dish. Sprinkle panko-Parmesan mixture over fish. Bake until fish is cooked through and crumbs are golden, about 15 minutes. Serve immediately.

Made this with Tilapia and bone-less,skin-less chicken breast.Next time will leave out salt (plenty in the parmesan). Very good.

Good, easy - and tasty - recipe. I was disappointed in the "flounder" I had (looked more like tilapia) so I only cooked it for 10 minutes and then broiled it for a few minutes to get it to brown. Served it with a brown-wild rice pilaf. Will make again.
Outstanding!!!! One of the best flounder recipes I've ever had and so easy to make too! I used lemon-pepper panko.
