  • 2 sticks Margarine, softened
  • 1 cup + 2 Tbsp Sugar
  • 1 Egg, lightly beaten
  • 1 tsp Vanilla Extract
  • 3 cups Flour
  • pinch of salt

Preparation

Step 1

In a stand mixer fitted with a paddle attachment, mix the margarine and sugar together until just incorporated. Do not overmix.
Add the egg and vanilla. Mix on low speed, stopping to scrape down the sides of the bowl intermittently as needed.
Add the flour and salt. Mix on low speed until a dough is formed and there are no longer any streaks of butter in the mixing bowl.
Line a baking sheet with parchment paper.
Turn the dough out onto a sheet of plastic wrap and form a ball. The dough should not be sticky. Wrap tightly and refrigerate for 1 hour.
Working on a well-floured surface, knead the dough slightly, squeezing it to flatten the ball into a disc.
After shaping cookies, refrigerate shapes for 30 minutes.
Bake @ 350 for 15-20 minutes.
