- 4 eggs
- 5 teaspoon salt
- 1 teaspoon olive oil

Preparation
Step 1
Place 3 cups of flour on clean counter Make a hole in the flour (form a volcano)
In small bowl beat together olive oil salt and eggs.
Pour egg mixture into the hole of flour and work the flour into the mixture. Keeping the volcano until there is no more egg mixture left and you have a sticky dough. If needed add a tsp of warm water. Mixture will be sticky and rough.
Shape into ball and knead back and fourth add more flour as needed. Cover and let dough sit at room temperature for 1 hour. Cut ball into 4 pieces and cover with flour.
Using pasta machine set it a largest setting and roll dough through. Repeat until you reach smallest setting.
Roll dough through noodle setting.
Bring water to boil and add pasta. Fresh pasta cooks quickly.
