Sun Dried Tomato and Basil White Bean Burger

Ingredients
- 1 (15 oz.) can great northern beans, drained and rinsed
- 1/4 medium onion, roughly chopped
- 1 clove garlic
- 1/4 cup sun-dried tomatoes, patted dry
- 3 medium basil leaves
- salt & pepper
- 2 Tbsp. oat flour (grind oats in food processor until fine)

Step 1
Place 3/4 of the can of beans, onion, garlic, sun-dried tomatoes, basil, salt and pepper in a food processor. Blend for 30-45 seconds until smooth (may need to scrap side of food processor). Transfer to a mixing bowl and stir in the oat flour and remaining beans.
Form mixture into 4 patties and carefully transfer to a skillet that has been sprayed with non-stick spray. Cook for about 5-7 minutes on medium heat until the bottom is browned and set. Flip and cook for an additional 4-6 minutes until the opposite side is browned. Serve with a toasted bun and your favorite burger fixings! Serves 4.
